BOLOGNA BREAKFAST BISCUIT

2 slices Fischer's Thick Bologna,
(cut in half)
4 raw eggs, mix well
-or-
1 pint cholesterol-free egg substitute
4 slices American cheese (regular or low-fat)
4 bake 'n' eat baking powder biscuits,
(prepared)
Cooking spray

Coat a large non-stick pan with cooking spray and place over medium heat. When pan is hot, add eggs, lower heat and cover. Don't "scramble eggs." Instead allow eggs to set. While eggs are cooking, microwave Fischer’s Thick Bologna on high for 1 minute. Loosen eggs in pan and divide into four portions. Lift and fold over egg sides to fit on each biscuit bottom. After placing egg on biscuit, place cheese on egg, add bologna slice and top with other half of biscuit.
